As against white rice, brown rice is one of the most favourable choices of rice. It not only keeps chronic health illnesses at bay, but also keeps a check on your calories. Ingredients:2 cups brown rice1 tbsp ghee1 tsp cumin seeds1 inch cinnamon stick3 cloves½ cup sliced onions½ tsp sugar½ cup green peas1 cup cauliflower florets½ cup chopped green beans1 large potatoes2 tsp salt½ tsp black pepper powder½ tsp garam masala powderWash and rinse brown rice. Soak in water for an hour. Heat ghee in a pressure cooker. Add rice to the pressure cooker along with water. Add salt, black pepper powder and garam masala. Stir together. Close the lid and cook for 3-4 whistles on high heat. Let the pressure release on its own. Serve warm.
Ingredients:1/2 cup brown rice1 cup green moong dal2 tsp ghee1 tsp cumin seeds1/2 tsp asafoetida1/2 tsp turmeric powder2 clovesCombine brown rice and green moong dal. Wash and soak for 30 minutes. Drain the water and leave aside. Heat ghee in a pressure cooker. Add cumin seeds, asafoetida, turmeric powder, cloves and saute for a few seconds on medium heat. Add the rice-dal combination, salt and water. Mix well and pressure cook for 4 whistles. Let the steam release on its own. Serve hot!
Ingredients:2 cups brown rice¼ cup poha or flattened rice2 tbsp chana dal½ cup urad dal½ tsp methi seedsSalt to tasteSoak brown rice in water, cover with lid and keep aside for 4-5 hours. In a separate bowl, do the same for urad, chana and methi seeds. Cover and leave aside for 4 hours. Wash and drain the brown rice and add to a blender. Form a smooth paste using water. Wash and drain urad, chana and methi seeds and blend to form smooth paste. Transfer the paste to brown rice paste and combine. Add salt to taste and mix together. Cover it up and let it ferment for 8 hours. Heat a non-stick tawa, pour a ladle of batter and spread in a circular motion. Sprinkle some ghee over it and let it cook on high flame. No need to cook on both sides. Fold and make a semi circle. Serve warm with coconut chutney.
Ingredients:2 cups cooked brown rice3 cups milk2 tbsp raisins1/4 cup sugar1 tsp butter1/2 tsp ground cinnamonCombine brown rice, milk, raisins, ground cinnamon and sugar in a pan. Cook on medium to low heat until thick and creamy. Let the milk be absorbed completely. Keep stirring in between to avoid clumps. Turn off the heat and add butter. Stir well and transfer into a serving bowl.
Wash and rinse brown rice. In a saucepan, add the rice and water. Add a little ghee. Turn on the heat and bring the water to a boil. Reduce heat, cover and let it simmer for about 45 minutes. Cook until the rice is tender. The water should be fully absorbed. Your brown rice is ready to eat.
