There’s maybe nothing more comforting than a home-baked casserole. They’re guaranteed to warm you up, and are SO easy to make. Just assemble, bake, and sit back and enjoy the incredible aromas emanating from your oven. There’s just one tiny little hiccup. One of the best things about casseroles is how perfect they are for dinner, all year-round, particularly when we’re filling them with lots of seasonal vegetables. In spring and summer, we’re reaching for veggies like springy asparagus, zucchini, sweet corn, and eggplant for our casseroles. We pull out our cheesy asparagus & bacon casserole and our breakfast strata for all our springtime brunches; our zucchini casserole with garlicky breadcrumbs or yellow squash casserole for easy lunches; and our zucchini lattice lasagna or our vegetarian eggplant moussaka for satisfying dinners. In fall and winter, when it starts to get colder, we lean on root and cruciferous veggies like sweet potatoes, Brussels sprouts, and cabbage in our casseroles. Try our cheesy Brussels sprouts bake, our unstuffed cabbage casserole, or our harvest chicken casserole for ideas—they’re delicious enough that even veggie-haters will enjoy them. We’re also not above enjoying holiday favorites outside their special day, and we make sweet potato casserole or green bean casserole as often as we can (helps keep our mood up during the long winter, try it!).
