5. Butternut Squash and Black Bean Burgers

Squash and beans are a combination I always love in soups, salads, tacos, and burritos, and it’s no surprise that the two ingredients also work great together in a veggie burger. These burgers are excellent with a slice of mozzarella or melty vegan cheese, which adds richness and some extra structural Support on a bun. And since the beans and bit of starch do all the work in terms of binding the burger, I recommend the “Smash Burger” cooking method. Also, since this Butternut Squash and Black Bean Burgers by Lukas Volger only calls for half a butternut squash, you might as well roast the other half at the same time and use it for soup. 7. No-Bake Creme Brulée

A classic French dessert, creme brulée, which translates to “burnt cream,” is a cold, creamy, rich custard beneath a crisp coating of burnt sugar. To get to the custard, you need to break through the sugar, and with each mouthful, you get crunchy bits of caramelized sugar as well. There is decadence in every spoonful of creme brulée, which traditionally requires eggs and heavy cream. This No-Bake Creme Brulée by Tina Dawson replaces cream with full-fat coconut milk and eggs with custard powder. Serve with fresh mango for a luxurious flavor combo of creamy custard with sweet, juicy mango.

8. Vernil

Holiday vernil is my take on a popular traditional Puerto Rican dish called pernil. It is a shredded pork shoulder dish that is salty, juicy, garlicky and succulent. My jack-fruit vernil mimics the texture perfectly and still leads to that succulent bite. This Vernil by Lyana Blount is packed with flavors from our seasoning and makes a great comfort food. 9. Watermelon and Citrus Salad

Make this Watermelon and Citrus Salad by Lukas Volger when watermelon is at its peak, sugar-sweet and juicy. I prefer basil to the fresh mint typically used in watermelon salad, but feel free to use mint instead. 10. Flancocho

Flancocho is a custard that is baked on top of a chocolate cake. Flan is a popular dessert in Puerto Rico, normally made with condensed milk and sugar to make a custard. This Flancocho by Lyana Blount was a recipe I worked on for three months to perfect, and it is now a popular item on the Black Rican Vegan menu. This dessert is sweet, and the custard texture mixed with the moist chocolate cake makes it a perfect bite every time. You’ll need a Bundt pan for this recipe, so make sure to plan ahead.
