This Tangy Tomato Rice by Anusha Moorthy Santosh of the dishes that never existed in our household, and suddenly one day, it made a special appearance for lunch when I got back home from school. It quickly became a weekly staple and my brother, Chirag’s, favorite dish. I love adding a lot of garlic and fresh green chilies, and the key to taking this tomato rice to the next level is to use fresh tomatoes instead of canned ones. It really makes a difference. When I lived in Belgium, I would use up leftover rice by adding spices to store-bought passata and mixing everything together to make a quick variation of tomato rice. It tasted fantastic at the time, but now I would never go back to passata. Fresh tomatoes make a world of difference.
