Idli is one of the popular South Indian delicacies that is loved pan India. These steamed fluffy discs are not just easy to make but digest too. Mostly made with idli rice, this pristine white treat is best served with sambar and coconut chutney. To make this idli, you need 1 cup bajra (pearl millet), 1/4 cup idli rice, 1/2 cup urad dal, 1 tsp fenugreek seeds, salt, and oil. Soak bajra, urad dal, fenugreek seeds and idli rice separately for 5 hours. Blend them together and add salt and mix anticlockwise for 2-3 minutes. Allow the batter to ferment in a warm place for 6-8 hours and then using an idli steamer make fluffy idlis and enjoy with sambar and coconut chutney. (Image: istock)
To make this low carb, high protein idli you need 1 cup quinoa, 1/3 cup urad dal, 1/2 cup poha, 3/4 tsp fenugreek seeds, water, salt, and oil. Rinse dal, quinoa, and fenugreek seeds and soak them for 6-8 hours separately. Now, blend them together along with washed poha and add salt and allow the batter to ferment for 6-8 hours. Now using an idli steamer make fluffy idli and enjoy it with coconut chutney. (Image: istock)
Dry roast 1 cup semolina and allow it to cool down. Now add 1 1/2 cup sour curd, salt to taste and mix well. Add 1/2 tsp baking soda to it and mix well. Allow the batter to rest for 5 minutes and then using an idli steamer, make soft and fluffy idlis and enjoy. (Image: istock)
Take 1 cup poha and add 1 cup curd to it. Mix well and then add 1 1/2 cup rava. Mix all the ingredients, and then add salt to taste and 1 cup water. Cover the batter and let it rest for 30 minutes. Now, add 1/2 cup water to adjust the consistency and just before steaming, add 3/4 tsp Eno and your batter is ready. Steam idlis and enjoy. (Image: istock)
